Making Pancakes with Bananas
Pancakes and bananas are a great pairing. It’s simple enough to jazz up your regular pancake recipe by adding banana slices, but did you know that you can also make pancakes with only bananas and eggs?
This recipe isn’t your average pancake, but it is gluten-free, dairy-free, and delicious. You only need two ingredients:
- 2 eggs
- 1 ripe banana
Mash up the banana until it’s smooth, add the eggs, mix until combined, and fry. Note that it may require a little bit more work to flip them, as they will be more delicate than regular pancakes.
If you choose to make your pancake with banana, be sure to use a banana that’s very ripe to make up for the lack of added sugar. Since the banana is the primary ingredient, the finished pancakes will taste like bananas, but you can dress them up with a hint of vanilla or honey to round out the flavor if you choose.
