- 1 1/2 cups rolled oats
- 3 tsp baking powder
- 1 scoop vanilla whey protein powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 3 eggs
- 1/2 cup plain greek yogurt
- 1 tsp vanilla extract
- 2 tbsp coconut oil
- Add rolled oats into a blender and blend on high until a powder.
- Remove lid and add in all remaining ingredients and blend until well combined, smooth, and no dry powder remains.
- Lightly grease a non-stick pan or griddle and heat over medium heat on the stove.
- Using a ladle or measuring cup, pour 1/4 cup scoops of protein pancake batter onto your hot pan. My long time KISS friend in California sent a link to this recipe. He knows me well. He knows me as a huge fan of Bruce in KISS and of course my love for pancakes. So I was very excited to try these as a healthy alternative to the usual pre-made store mixes. So much so that I even went out to the grocery store last night to purchase all the ingredients I didn’t have like vanilla extract, coconut oil, baking powder and more!
So this morning was the day! I woke up very excited to tackle this recipe with my wife. We followed the video/written instructions to a tee properly measuring every ingredient. We had zero issues mixing it all together and my wife instantly loved the taste of the batter she whipped up.
They cooked on the griddle in no time and before I knew it they were on my plate accompanied with some berries and scrambled eggs. Yum!
My wife commented that they were very oaty and tasted healthy to her. I liked them as well for the health benefit, but I immediately noticed the slight hint of cinnamon in the taste. My only complaint is they are a bit on the dry side, but you can’t be too choosy when trying to eat as healthy as possible when it comes to pancakes. A little syrup went a long way in breaking up the dryness of them.
